Automatically switched on while sitting on the table.

Just back from a dogwalk, I saved the recorded activities and turned it off, put the kettle on and I get an alert "your activity is ready to view etc etc " on my phone. Sure enough the device as I saved the activities stealth turned on the WiFi and uploaded the log. Without showing any WiFi symbol as its switched off.
So I went back to the device, maybe 5 minutes had passed and watched it boot up and turn on by itself. Its just sitting on the table nothing near it, I'm the only one in the house and the dog is in his bed in another room.
Not sure if it's linked but during my dog walk as I set a way point to walk to I noticed all my way points have been duplicated so I have two of every place...
Very intrusive to upload my data without my permission, it's WiFi is off as I want to choose what gets uploaded if any of it..

The device connecting to Wi-Fi even though Wi-Fi is disabled is a known bug, see
Unit connects to Wi-Fi when Wi-Fi is disabled [Bug 7].
As for the device turning on out of itself, I've never experienced that. Are you sure that expedition mode is off on your device? That's the only thing I can think of.

Never used expedition mode, just had a look and it says "never". I saved the data, turned it off and put it on the table. I watched it go of before I put it down, easily 5 minutes wen past, I turned on a laptop to sort out all the duplication that randomly happened today and before I touched it it came to life and landed on the map page.
No usb plugged in , just sitting there, weird..

How can you be certain Wi-Fi was used to upload your activity? If your phone was connected via Bluetooth, this data can be uploaded this way also.

Have used more than 150 Garmin devices over 20 years, never seen a single one 'start up' from 'off' without user input. Not saying it is impossible, but highly unlikely. I suspect it was in standby mode, which is nearly indiscernible from being powered off.

...again, can also upload via Bluetooth connection.

Do you have anything connected to it via Bluetooth or Ant+, such as a watch or heart rate monitor? I have had problems with frequent crashing with my HRM connected via bluetooth; connect it via Ant+ and so far no problems. When I come to switch my unit off, if the HRM is still connected and sending data, the unit will switch off but then reboot; turn off my HRM connection and the unit turns off without issue.

Interesting that yours dd the same thing but with something connected.
If I need to use Bluetooth on my phone I turn it on so its off for 99 percent of the time. Always off when not in use.

I too connect my phone via Bluetooth but that does not appear to cause an issue. Just the HRM, which I guess is constantly sending data to the unit, unlike the phone.
